It cross-references real POS data (sales) with food cost calculated by the stock module. What data is needed for the BCG matrix to work?

Real sales (from POS — table service + take-away) and food cost per dish (calculated by the professional stock module). Without food cost filled, margin shows as N/A. The matrix needs at least 30 days of data for statistical signal.

How to interpret Stars vs Plowhorses vs Puzzles vs Dogs?

Stars: high popularity + high margin (promote, keep visible). Plowhorses: high popularity + low margin (raise price or swap expensive ingredient). Puzzles: low popularity + high margin (reformulate, better description/photo). Dogs: low popularity + low margin (discontinue).

Can I rerun the analysis for a specific period?

Yes. Pick the period (week, month, quarter or custom range) and the matrix recomputes. Useful to compare seasons (summer vs winter) or evaluate the impact of a menu change in the following weeks.
